Fleur de sel
The brill is a lozenge-shaped fish. Preparing it is very simple: rinse the fish under running water and pat it dry with kitchen paper. Put the fish in a large dish and cook in the preheated oven at 180° for about 20 minutes, adding olive oil and fleur de sel. Take it out of the oven, serve with Giovanni’s Giardiniera mixed pickled vegetables in large pieces, together with aromatic herbs.
Serve the brill with a light aromatic wine, ideal to cleanse the palate with this rich recipe.
