“Arrosticini” are skewers of lamb and are a typical dish from Abruzzo..
To make the arrosticini, cut the lamb into small pieces of about one centimetre and thread them on to a long wooden skewer. Grill or roast the lamb skewers in a non-stick pan without fat for a few minutes, to brown the outer side of the meat. Turn over the skewers to brown them on all sides. Serve the arrosticini with our sauces and lime juice, add pepper and fleur de sel. Accompany the dish with warm bread and a light and aromatic wine.
