We called this recipe “The Essentials”, because the flavors are decise and natural. The apple vinegar reaches sharply the palat and gives personality to our crunchy vegetables which are enhanced by a caper leaf. This is the more “vertical” among the 3 recipes.

Pairings

Vegetables with a bite to accompany fatty pork cured meats, boiled meat, spicy boiled sausages and cooked cured meats. Sardines, anchovies and fresh or preserved mackerel.

These onions hide a rock and roll soul behind their romantic sight thanks to the berry flavoured vinegar that gives to this recipe a perfect balance between the sweet and the sour. They’re crunchy at first bite, but with a tender heart not only because of its texture but also because they contribute to the Pink is good project, a “pink” cause that Morgan and Luciana had been contributing for the last two years.
